how do you find an unknown length in similar figure pairs

Pick a pair of sides whose length you DO know.  Whatever their ratio is, every pair of sides has the same ratio IF the figures are similar. 

Like if you find a pair of corresponding sides and the big one is double the length of the small one, then the big one is double the length of the small one for EVERY pair of sides in those two figures.
